Vegetable Kurma

Vegetable Kurma can be had with chappathi .You can  add any vegetables of your choice.

Ingredients

  1. Chopped vegetable - 2 cups(carrot ,beans ,potato ,peas)
  2. Coriander Powder - 1 tsp
  3. Salt as needed 
  4. Oil - 3 tbsp

Whole Garam Masala

  1. Clove -2
  2. Cinnamon - 1 stick
  3. Cardamom - 2 
  4. StarAnise -1 small
  5. Bay leaf - 1

 Ground Paste - I

  1. Onion - 2 , big
  2. Ginger & Garlic paste - 1 tbsp
  3. Green chilly - 3 
  4. Poppy seeds - 1 tsp

Ground Paste - II

  1. Grated Coconut - 4 tbsp
  2. Badam - 4
  3. Cashewnut - 7


Method 

  1. Heat oil in a pan , add the whole garam masala ,when it splutters ,add the ground paste -I and coriander powder and stir it well.
  2. Let it cook in low flame for 10min.Keep on stirring ,have an eye else it will get burnt.
  3. Now add the chopped vegetable and salt .Mix it well.
  4. Add 3 cups of water ,when it comes to boil close with a lid ,cook till the vegetables are soften.
  5. Now add the ground paste -II ,and mix it well with the cooked vegetables.
  6. After 2 min.Remove from heat and serve.
  7. Serve with roti.

Tips

  1.  If you want a thick gravy add less water.
  2. Dont let it boil after adding ground paste - II, the coconut gets cooked in the heat itself.
  3. Adjust the spice according to your likings.
