Boiled Fruit Cake - Nonalcoholic


                                Fruit cake can be made in two method,soaking and boiling.I had many attempts of fruit cake ,it was a failure .I tried soaking method was not quite successful,so tried this simple method.I tried the recipe from here , made some changes as i wanted a non -alcoholic cake.It turned out great.This is sure a keeper.This cake is quite easy ,not much of mixing.Do plan ahead as due to temperature outside was cold , it took a  lot of time to cool down.
You can add dry fruits of your  choice.I wanted the spice to be quite mild so added little.I have used grape juice as a substitute for alcohol.do try the awesome cake,you will not regret it.

Serves : 20 pieces.

Ingredients
  1. Egg - 2 Large ,beaten with fork 
  2. Maida - 250gm 
  3. Almond Flour - 50gm
  4. Butter - 125gm 
  5. Light Brown Sugar - 170gm
  6. Grape Juice - 1cup / 200 gm
  7. Cirus peel - 50gm
  8. Raisins - 50gm ,chopped
  9. Dates & Prunes - 75gm
  10. Soda Bi Carbonate - 1 tsp
  11. Lemon Juice - 1 tsp
  12. Orange Juice - 1tsp
  13. Orange & Lemon zest - 1 tsp
  14. Baking Powder - 2 tsp
  15. Nutmeg Powder  - 1/4 tsp
  16.  Clove Powder - 1/4 tsp
  17. Cinnamon Powder - 1/2 tsp
  18. Almonds - 50g ,chopped
  19. Cashewnuts - 50 g,chopped
  20. Crystallize Ginger - 1 ,small piece , chopped 
  21. Vanilla essence - 1 tsp

Method

  1. In a bowl add butter , sugar, raisins ,dates , prunes,grape juice ,soda bi carbonate in a large bowl.Place in medium heat and give a stir .When the whole bowl is filled with foam , let it boil for another 2-3 min.Careful ,as the foam tends to overflow.Remove from heat.
  2. Now add the juice of lemon and orange and the 
  3. Let it cool completely.It will take 30-45min ,depending on the climate.
  4. In a bowl sieve baking powder and maida. .Add almond flour to this and give it a mix.
  5. Line a  9" cake pan with 3 layers of  butter paper.This ensures that the cake does not get too brown on the sides.
  6. When the boiled mixture is cooled completely.Add the egg and stir to ensure that the egg mixes .
  7. Add the chopped almond and cashew nut and stir it once.
  8. Now add the vanilla essence.Give a stir.
  9. Now add the flour little by little and give a mix, the color of the mixture will turn from dark brown to light brown .Add to the cake pan and immediately bake it in a
  10. Preheated the oven for 40min in 160F. When the skewer inserted in the middle of the cake should come clean.
  11. If the skewer is not clean again bake it for another 10min.
  12. Cool the cake completely .This taste great after 1 day.

Tips
  1. Using fresh grape ,orange and lemon juice makes the cake very tasty.
  2. Do line the cake pan with 3 layers of butter paper.
  3. Cool the cake completely.
  4. You can store this cake outside for 2  days ,it was good .

  1. The boiling process must have incorporated the flavors outs because I can see the moistness in the cake. Sometimes we do fail in the recipes but in the end, all turned out perfect. Just a pieces will be what I need.

  2. Lovely moist cake Meena, I have done a boiled cake previously but that has eggs. Great to see an eggless version here :) you sure have a baking sphere I suppose. Enjoy
