Orange & Chocolate chip Muffin


                    My family loves blueberry muffin,the muffins i get in store ,we are not happy,so stopped getting it.When i saw the recipe form Priya ,i thought i should definitely try it.The ingredients are simple,i liked the idea of using single cream.I have already made 4 batches of it in 2 weeks ,they vanished in a jiffy.I wanted to have another variation of chocolate chips and orange zest and juice.boy,u should try it.The flavour of orange was not intimidating,it was very subtle.It is a keeper recipe.I am planning to make other variation too.It takes 10min to totally whip and bake for 20min.Viola,the muffin is ready .We gorged lot of them hot and next day just warmed for 10sec and finished the rest. You can whip some butter cream or cream and decorate it.
    The first time i baked it was a disaster,i mailed  Priya ,to know where i have gone wrong.She gave me a lot of tips  and she encouraged me a lot.Thanks Priya.

Happy to share the Tips given by priya to me....

  1.  Don't overmix, its not cake, less mixing gives better tasting muffins
  2.  I used self-raising flour - it is a combination of maida/ all purpose flour + baking soda + pinch of salt.
  3.  If you are using only all purpose flour/ maida make sure for every cup maida you add 1 and 1/2 baking powder and pinch of salt.

Makes:12 small muffin
 
Ingredients
  1. Butter-6tbsp
  2. Fresh Cream-1/2 cup
  3. Granulated Sugar-3/4cup
  4. Vanilla Essence-1 tsp
  5. Self Raising Flour-1 1/4
  6. Eggs-2
  7. Fresh Grated Orange Zest -1/4 tsp
  8. Chocolate chip as -2tbsp + 1 tbsp for muffin case
  9. Fresh Orange juice with bits-1/4 cup

 Method
  1. Preheat the oven to 350 F/180C degrees.
  2. Line the muffin case with paper case and add the 2-3chocolate chips to each each muffin case.
  3. In a bowl whisk together butter and sugar until pale and fluffy.
  4. Add egg,vanilla essence,flour,orange jest and orange juice with bits.Beat them just enough for them to mix together.
  5. Add some chocolate chips to the batter and give a stir.
  6. Scoop the batter to the muffin cases ,you can top with some chocolate chips if you want to and bake for 20-25 min.When toothpick is inserted it should be clean and the top should be golden brown.
  7. Serve hot or cold.
