Every month Divya of YouTooCanCook conducts a SNC challenge event.This is my II participation in her event.It is a quite interesting event, the fun part is we wouldnt have heard of the food nor tasted it .Still you push yourself doing it.The South Team is challenged with a Northern delicacy and viceversa.I belong to the SouthTeam.This month South Team were challenged with Peas Kachoris & Dum Aloo is a Bengali delicacy by Sanoli of Sanoli's Kitchen.
I love kachoris , but using green peas , it was different to me .Dum aloo i have tasted but never tried at home.I was wondering whether these two would match ,Trust me when you have it together it is definitely yum.
I was very skeptical about trying with Maida (not very healthy ,blah blah ),still i thought and went ahead a prepared a small batch .We all loved it .I wondered how could a fried fritter could bring such a taste , sure you should all try it .I was also thinking ,whether i should add sugar , still went ahead with the recipe,it was yummy and brings a very nice taste to the food.The pooris didnt absorb oil as i suspected.I must admit it was quite a heavy lunch for me .
I appreciate Sanoli for her detailed step - step instruction and pics , i was running between the kitchen and hall to check from her site whether i have added as she instructed.Thanks Sanoli .I quite enjoyed doing this challenge.
Ingredients for Dum Aloo
- Baby potatoes - 8 , cooked till firm
- Greenchillies - 3,diced
- Onion - 1/2 , diced (optional)
- Ginger Garlic paste -1 /2 tsp
- Tomato - 1
- Peas - 1 cup(100g)
- Turmeric Powder - 1/4 tsp
- Kashmiri Chilli Powder - 1/4 tsp
- Coriander Powder - 1/2 tsp
- Garam Masala - 1/4tsp
- Curd -1 /2 cup
- Sugar - 1/2 tsp
- Salt as needed
- Oil - 2 tsp
Whole Garam Masala
- Bayleaf - 1
- Whole Jeera - 1/4 tsp
- Whole Fennel seeds - 1/ 4tsp
Poke the cooked and peeled baby potatoes gently with a fork.
Marinate baby potatoes with a pinch of salt, turmeric ,ginger & garlic & chilli powder .Mix well and rest it for 10min.
Method for making DumAloo
- Heat oil in a wok ,add the potatoes and roast it for 5min , till they are golden.
- Add the whole garam masala , when it splutters add the onion and saute it well.
- Now add the green peas ,greenchilly ,tomato ,salt and the remaining powders and mix it well.
- Cook till the oil separates.
- Now add the sugar and fried potatoes and cook for another 5min.
- Beat the curd and add 1 cup of water.
- Cook in simmer for 5min.Remove from flame .
Ingredients for Katchori
- Maida - 1 cup
- Oil - 2 tbsp
- Salt as needed
- Water
Ingredients for Filling
- Peas - 1 cup(200g) - frozen
- Green chilly - 1
- Ginger & garlic paste - 1/2 tsp
- Sugar - 1/2 tsp
- Whole Jeera - 1/4 tsp
- Salt as needed
- Oil - 1 tsp
- Microwave the peas for 2 min.Drain the water.
- Pulse together peas and green chillies in a mixer ,into a coarse paste.
- Heat oil in a kadai , add the jeera when it splutters add the ground paste.
- Mix it well.Add little hing ,sugar and salt and mix it well.
- Cook it till all the moisture is gone.Remove from heat and let it cool down.
- Divide the dough and filling into equal parts.
- Heat a kadai with oil for frying.
- Take a small ball of dough ,and flatten it a bit .
- Take a ball of peas filling and keep it in the middle of the dough.
- Close the dough and make it into a ball.
- Using a rolling pin , flatten the dough not too thin / thick .Ensure that the filling doesnt come out.(Use more flour to roll)
- When the oil is hot , deep fry them , it puffs up well.
- Do the same with remaining dough.
- Serve them hot with Dum Aloo.
