After a long stretch of the work , you want a simple yet fulfilling meal.I like soup as a dinner with some toasted breads.It is quite easy and simple soup.I have added vegetables which i have in hand , you can substitute any vegetables of your choice.To thicken the soup i have added maida flour.Do try this soup you would love it.Dip some bread and have it.Kids will love it.
Ingredients
- Tomato - 3 ,medium , cut into small pieces
- Leek - 1 stick
- Carrot - 1
- Capsicum - 1/2
- Garlic - 2 pod
- Celery -1 stick
- Onion - 1 ,small
- Pepper powder - 1/2 tsp
- Jeera - 1/4 tsp
- Green Chilli - 1 ,slit
- Salt as needed
- Olive oil - 2 tbsp
- Maida - 3/4 tsp
- Basil - 3 leaves
- Sugar - 3/4 tbsp
- Water - 3 cup
Method
- Cut tomato ,leek,carrot ,capsicum,celery,onion and garlic into small pieces
- Heat 2tbsp of olive oil , let jeera sputter,then add all the cut vegetables except tomato
- Saute it for 2 min.Then add the tomato and mix well
- Now add the pepper powder and split green chilli
- Now add the water and salt .
- Pressure cook for 2 whistles.
- Puree using the hand blender ,when the cooked items have cooled a bit.
- Careful because the soup will be very hot .
- Sieve the blended puree.
- Heat a pan with add 1 tbsp olive oil ,add the maida and stir it well and fry it till it turns golden brown.
- Add the seived puree slowly and mix it well .
- You can add sugar .
- Let it boil for 5 min.
- Yummy soup is ready
