Tomato Soup

After a long stretch of the work , you want a simple yet fulfilling meal.I like soup as a dinner with some toasted breads.It is quite easy and simple soup.I have added vegetables which i have in hand , you can substitute any vegetables of your choice.To thicken the soup i have added maida flour.Do try this soup you would love it.Dip some bread and have it.Kids will love it.


Ingredients

  1. Tomato - 3 ,medium , cut into small pieces
  2. Leek - 1 stick
  3. Carrot - 1 
  4. Capsicum - 1/2 
  5. Garlic - 2 pod
  6. Celery -1  stick 
  7. Onion - 1 ,small
  8. Pepper powder - 1/2 tsp
  9. Jeera - 1/4 tsp
  10. Green Chilli - 1 ,slit
  11. Salt as needed
  12. Olive oil - 2 tbsp
  13. Maida - 3/4 tsp 
  14. Basil - 3 leaves
  15. Sugar - 3/4 tbsp
  16. Water - 3 cup

Method

  1. Cut tomato ,leek,carrot ,capsicum,celery,onion and garlic into small pieces
  2. Heat 2tbsp of olive oil , let jeera sputter,then add all the cut vegetables except tomato
  3. Saute it for 2 min.Then add the tomato and mix well
  4. Now add the pepper powder and split green chilli
  5. Now add the water and salt .
  6. Pressure cook for 2 whistles.
  7. Puree using the hand blender ,when the cooked items have cooled a bit.
  8. Careful because the soup will be very hot .
  9. Sieve the blended puree.
  10. Heat a pan with add 1 tbsp olive oil ,add the maida and stir it well and fry it till it turns golden brown.
  11. Add the seived puree slowly and mix it well .
  12. You can  add sugar .
  13. Let it boil for 5 min.
  14. Yummy soup is ready
