Egg Briyani



This is a simple egg briyani , not too spicy at all.

 Serves - 5

Ingredients

  1. Boiled Egg - 4,deshelled
  2. Onion -2 , sliced
  3. Tomato - 1,chopped
  4. Green chillies - 7 slit
  5. Ginger & garlic paste - 1 tbsp
  6. Mint leaves - 7 leaves
  7. Coriander leaves - 3 string chopped 
  8. Curd - 2 tbsp 
  9. Turmeric Powder - 1/4 tsp
  10. Chilli Powder - 1/2 tsp
  11. Garam Masala Powder  - 1/4 tsp
  12. Basmati rice - 2 cups
  13. Water - 2.5 cups
  14. Oil -1/4 cup
  15. Salt as needed

Spices

  1. Cardamom - 4
  2. Cinnamon stick - 1 small piece
  3. Clove - 3
  4. Star Anise - 1 small 

 Ground Paste

  1. Coconut - 3 tbsp
  2. Pepper - 1/4 tsp
  3. Saunf - 1/4 tsp
Grind it all together into a smooth paste with  water.Strain the juice and discard the pulp.

 

Method

  1.  Wash and soak basmati rice for 15min.
  2.  Make 4 slits on all the sides of the egg.
  3. Heat oil in a pressure cooker.Add all the spices.
  4. When it splutters add the onion and fry it till translucent.
  5. Then add the green chilly and stir for a second
  6. Then add the ginger & garlic paste ,and mix it well.
  7. Add the tomato and mint and stir well
  8.  Then immediately add the tomato ,curd and all the spice powder
  9. Let it cook till the tomato becomes mushy and mixture becomes like gravy.
  10. Now add the strained juice from the ground paste.
  11. Now add the soaked basmati rice ,salt and water.Stir it well that everything mixes well.
  12.  Add the egg now.
  13. Close the pressure cooker with the lid.
  14. When the steam comes ,reduce the heat completely and let it cook for 15min.
  15. Switch off from the flame .Open it after 15min.
  16. Serve it hot with raita.



Tip

  • Dont cut the eggs,slitting ensures more flavour.
  • This is medium spicy you can add more chilly to your taste.
  • Coconut milk makes the rice more flavourful using only the juice enhances more taste , you can add the ground paste also.
  • using less chilly powder gives us pale color.
